Diethyl malonate (DEM) is a diethyl ester of malonic acid, a colorless, apple-flavored liquid that occurs naturally in grapes and strawberries. It is a β-dicarbonyl compound, used as an intermediate in organic synthesis and drug synthesis, and can synthesize barbiturates, vitamin B1, vitamin B6 and artificial flavors. Diethyl malonate can be prepared by using chloroacetic acid as raw material, carburizing cyanide ions to produce, and esterifying it with ethanol.
Diethyl malonate or substituted diethyl malonate undergoes "keto decomposition" or "acid decomposition" to obtain acetic acid or acetic acid derivatives.
