Potassium metabisulfite is a chemical with the formula K2S2O5. Potassium metabisulfite oxidizes slowly to potassium sulfate in air and faster in wet air. Strong reducibility, decomposition when heated to 190ºC, grinding into powder burning hot. Soluble in water. Potassium metabisulfite is stable in dry air, and aqueous solution can be oxidized to potassium sulfate by air.

1. Potassium metabisulfite is used as a food bleach, preservative and antioxidant.
2. Used as an analytical reagent. Also used as developer, reducing agent, bacterial inhibitor.
3. Potassium metabisulfite is used as an additive in silver thiosulfate plating, and its sodium salt is also used in the treatment of wastewater containing chromium.
